IRISH SODA BREAD

Ingredients

4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 to 1 1/2 cups buttermilk

Directions

Preheat the oven to 425 degrees Fahrenheit. Sift the flour, soda and
salt together into a deep mixing bowl. Gradually add 1 cup of buttermilk,
mixing with a large spoon until the dough is firm enough to be gathered
into a large ball. If the dough crumbles, add some more of the
buttermilk, a tablespoon at a time, until the particles adhere.

Place the dough on a lightly floured board, and pat and shape it into a
flat circular loaf about 8 inches in diameter and 1 1/2 inches thick.
Set the loaf on a floured baking sheet. With the tip of a small knife,
cut a 1/2 inch deep cross into the dough, dividing the top of the loaf
into quarters.

Bake the bread in the middle of the oven for about 45 minutes, or until
the top is golden brown. Remove from the oven and wrap in a clean cloth
and let cool on a wire rack for about 20 minutes.

Irish Potato Candy (March)

1/4 cup butter, softened
4 ounces cream cheese, softened
1 teaspoon vanilla
1 package confectioners' sugar, (16 ounces)
1 package flaked coconut, (7 ounces), (about 2 1/2 cups)
1 1/2 teaspoons ground cinnamon

In a large bowl, with an electric beater on medium speed, cream
together the butter and cream cheese. Beat in the vanilla and
confectioners' sugar. With a spoon, stir in the coconut. Roll the
mixture between your hands to form small potato-shaped candies or
roll into small balls. Place the cinnamon in a shallow dish. Roll
the balls in the cinnamon, then place on a cookie sheet, cover,
and chill for about 1 hour, until firm.

Note: Make sure to use regular cream cheese, not a whipped or
reduced-fat type. And if you prefer "dirtier" potatoes, roll the
candies a second time in additional cinnamon after they've chilled

St. Patrick's Parfait

1 box instant pistachio pudding
2 cups milk
2 kiwifruit, sliced
Cool Whip
green food coloring

Prepare pudding according to package directions.

When pudding is chilled, layer pudding, kiwifruit and green-tinted Cool
Whip in clear plastic cups.

Serve with green-tinted lemonade.

Irish Venison Stew

Cut venison into chunks and marinate venison in buttermilk to clean
taste and tenderize the meat.

2 pounds of a choice meat, (Venison, Buffalo , Elk, Beef, Antleope, Lamb)
1 tablespoon juniper berries, crushed
1 tablespoon black peppercorns
3 garlic cloves, coarsely chopped
1-1/2 cups dry red wine
2 to 3 tablespoons olive oil
2 cups celery, cut into 1-inch diagonals
6 to 8 peeled small boiling onions
1-2 cups beef stock
salt and pepper 1/2 cup freshly hand picked shamrocks (for garnish)

Wash buttemilk off the venison. Mix the meat, juniper berries,
peppercorns and garlic. Add 1 cup of the red wine. Cover and marinate in
the refrigerator for 2 to 3 hours, or overnight.

Drain off the marinade and save. Heat the olive oil in your pot and
brown the venison. Add the celery and onions. Add all the red wine and 3/
4 cup beef stock. Cover and bake in a preheated 350°F oven for 45
minutes, or until tender, adding the remaining beef stock during baking
if necessary.

Remove from the oven. Season with salt and pepper and serve. You can
garnish serving plate with shamrocks for St. Patrick's day if you
celebrate it.

Oatmeal Bacon Pancakes

4 oz Flour
1 oz Fine oatmeal
1 c Buttermilk or milk
1 ea Egg (beaten)
8 ea Strips bacon

Sift the dry ingredients, then add the egg and enough milk or buttermilk
to make a batter like thick cream. Fry the bacon rashers and drain, then
make a large pancake, pouring the batter over the entire bottom of the
pan. Cook on one side, toss over, spread with a little mustard if liked,
then add the bacon and fold over. Make the rest of the batter into
pancakes the same way. Makes 4 very large pancakes or 8 small ones.

Cooking Tip-Baking Potatoes

Another easy way to bake potatoes.. Wash good and pierce the skin. Then
put in a baggie and pop in the microwave for a few minutes..depending
on the size. It is a quick and easy way to bake them in a few minutes.
Also very good..Don't seal the baggie though ..it will explode..
